can you guys help me out?--animals and God

had a really annoying conversation this morning on animals with someone who doesn't really respect them:

i know i have read in the bible where it is stated that man should treat animals with respect and kindness.

i also read in the new testament where jesus stated something to the effect..."not a single sparrow falls without the knowledge of the father."

i've just started reading the bible but i definately remember reading this. can any of you help me out on the verses where this is listed?
